White Chicken Chili
I first tried this, well sort of this, chili at a friends house. Instead of being patient and texting her for the recipe, I headed the grocery store and decided to GUESS the ingredients. Who would have thought that I was pretty dang close to figuring out the actual recipe.
This recipe has simple ingredients with simple flavors, but the toppings are what bring it so much magic. Be creative and have fun! I can’t wait to see what you come up with.
Accidental New Year - White Chicken Chili
How-To
Heat the cooking oil in a sauce pan and sauté the chopped onion and garlic together.
Place all other ingredients except the beans into a crockpot.
Cook on high for 3-4 hours or on low for 6-8
Once the chicken is fully cooked, shred it with a fork or use my handy dandy trick of placing the hot chicken into a stand mixer and turn it on low. Shredding chicken in a stand mixer is easy takes no time at all. Give it try!
Add back in the chicken and the drained and rinsed beans to the crockpot for another 10 minutes.
Serve and enjoy!
Dry ingredients
1 tbsp - cooking oil of choice
2-4 chicken breasts
1 onion chopped
1 clove of garlic
2 - 16oz cans of white beans
4-5 cups of chicken stock
2 cans of green chilies
1 tbsp - cumin
1 tsp - chili powder
1/2 tsp - dried oregano
Optional: The toppings are what bring this recipe to life. I love to add ALL of these suggestions, but truly there is endless potential. My favorite toppings: cheese, sour cream, avocado, cilantro, a squeeze of lime, corn chips, fried onion strings, and/or jalapeños!
